Chelbessa – Ethiopia
ORIGIN
Complex natural processed coffee from the Yirgacheffe region in southern Ethiopia. Chelbessa is the name of the station where the coffee is washed.
Ethiopian coffees can typically be traced back to the washing station, as it is common for many small producers to share a washing station. The Chelbessa washing station is used by almost 500 different coffee farmers from the area. In Yirgacheffe, most coffee is grown in the shade between larger trees using forest coffee or garden-like practices.
The communal washing stations based on the cooperative principle are practical because most Ethiopians who grow coffee typically do so on small plots of land where the income from coffee production supplements their other farming.
Chelbessa coffee is floral, with plenty of apple-like acidity and sweetness.
